what are some stats on using our best solar panels to generate hydrogen and
oxygen by electralysis? is it worth it yet?

It is not economical to produce hydrogen by using solar panels. Requires
far too much power to make it currently feasible.

Nope. At best, you are looking at $10 / GGE.

what if i'm burning the oxygen generated in the mixture along with the
hydrogen in my hypothetical generator? not only the hydrogen...

oxygen doesn't burn, it makes other fuels burn better. increasing the
air ratio over the optimum reduces the ability to burn. each fuel has
it's best air/fuel ratio. Nothing is going to make hydrogen more cost
effective.
