In installing flags (1" to 1 1/2" thick) on a 20' x 30' concrete patio
slab(which already has (away-from-the-house) pitch; what is the best
way to maintain proper finished height of flags as they go down to keep
that pitch consistent?
A. String?
B. Set up side boards?
C. Use a scrap board ripped to the finished height depth as a guide?
D. None of the above.

The easiest would be a string but I would also use a 4 foot level across the
last rock to the next (if the pitch is not too steep). Anything that works
for you should be good enough. you can also use a longer straight board
across several rocks to maintain a flat contour. Side or guide boards seem
like a lot of extra effort and cost for something that is removed in the
end.
