Can anybody recommend a good half mask N-100 respirator for wood
removal that might have mold on it? I have looked at several brand (3M
and AO safety but not sure which brand is most recommended.

N-100 is a government rating. So brand does not matter so long as you use a
mask which has the correct rating for the hazard.

As long as it has the rating it should be fine. Make sure it fits
well. Facial hair can interfere with performance.

One of the ways to test for a good fit is to block the exhalation valve
with the palm of your hand and blow out. You'll know right away
whether there's air escaping at the seal to your face.
